- 1/2 cup (1 stick) unsalted butter, softened
- 1 large egg
- 1/2 cup buttermilk
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, granulated sugar, brown sugar, ginger, cinnamon, cloves, baking soda, and salt.
- In a large bowl, cream together the butter and egg until light and fluffy.
- Add the dry ingredients to the wet ingredients alternately with the buttermilk, beginning and ending with the dry ingredients.
- Fill the prepared muffin tins 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Frost with your favorite frosting, such as cream cheese frosting, buttercream, or ganache.
